Chocolate Chocolate Chip Beet Muffins

I'll admit it - I've never been a huge fan of beets. Don't get me wrong, they're a beautiful vegetable. But growing up being served canned beets never really engendered me with a taste for this unique root vegetable. I want to like beets. 

So I did a little kitchen magic - let's make beets a breakfast food!

I whipped up a batch of chocolate chocolate chip beet muffins and had the whole household impressed. They don't even taste like beets, they're just a moist, delicious chocolate muffin.

Ingredients for 12 muffins:
1.5 lbs beets (2 large or 3 medium-size beets)
1¾ cups  flour
2/3 cup sugar
1/3 cup cocoa powder
1½ teaspoon baking soda
½ teaspoon salt
2 eggs
½ cup milk
½ cup vegetable oil
1 tablespoon vanilla extract
½ cup chocolate chips

First step: boil the beets for 45 minutes or until they are soft when pierced with a fork. I left the skins on, but cut the tops off. After the beets were softened by boiling, I cut the skins off easily, and chopped them into large chunks which I pulsed in a food processor to get a fine mince.  You could grate them with a cheese grater if you want to go old-school.

Next, heat the oven to 350 degrees (F).

Combine all the dry ingredients and stir them up well.

Combine all the wet ingredients and beat together.

Mix the wet with the dry ingredients until fully incorporated.

Fold in the chocolate chips.

Line your muffin tin with muffin cups, and fill with batter.

Bake for approx. 25 minutes or until a toothpick inserted in center comes out clean.

Enjoy, and feel good about yourself for eating beets!
